Caribbean Chicken, Shrimp, and Mango Sliders

Something refreshing and delicious for when you are in the mood for summer.


Ingredients:

  • 9 shrimp
  • 1 large chicken breast cooked and shredded
  • 1 mango diced
  • 1 1/2 TBS Rum (preferably Sailor Jerry's Spiced Rum)
  • 1 TSP Fresh or freeze dried basil
  • 2 TSP Lemon Juice
  • 1 TBS Honey
  • 1/3 C Mayonnaise (preferably olive oil mayo)
  • Salt
  • Pepper
Instructions:

Saute shrimp in a pan with 1 TSP of butter and 1 TBS of rum until the shrimp is done (pink). Dice cooked shrimp and place in a bowl with shredded chicken and diced mango.


 Combine in a separate bowl 1.5 TBS of rum, 2 TSP lemon juice, 1 TBS honey, 1/3 cup mayonnaise, and 1 TSP fresh or freeze dried diced basil. Mix the sauce into the bowl with the chicken, shrimp, and mango. Salt and pepper to taste (approximately 1/2 TSP salt and 1/2 TSP black pepper).

Take the mix and form individual patties to fit the size of buns that you have (I had small hamburger buns which are larger than sliders but smaller than standard buns). This mix should make approximately 5 patties.

Sear the patties on a slightly oiled pan until both sides are a slightly golden brown. Butter the inside halves of the buns and sear in a pan to give them a slight toasting.
If the patties do not stay in shape while flipping just reform on the hamburger bun. The focus is taste and it will still be pretty. :)

Serve with blue corn chips and salsa. Servings: 5 sliders
